Empty Pantry Garden Salad

When we got back in town from Thanksgiving with family, our fridge was bare.  I packed all our fruits and veggies in the car, and it’s amazing how much you can plow through while on a road trip.  I even found myself eating celery which I don’t normally like, something about a road trip I guess, what else are you going to do?

The day we got back, we had eggs for breakfast.  Do you see our new gray hen?  Apparently in France people will pay $30 for an omelet with their eggs… I don’t quiet notice a difference.

When lunch rolled around we still hadn’t shopped.  The boys and I picked everything we could from the front garden.  Sometimes I feel as though we are still retraining our minds to know that this will be satisfying enough for us, even though I know it is each time.  A sandwich with store bought ingredients may still seem more normal, it doesn’t have the same nutrient quality, and that’s what we keep in mind.

While I heated the two lonely pieces of salmon from the freezer, I chopped up what we found in the garden.  Whenever there is not enough for everyone, we use it as a topper for salad and everyone has enough.

Recently at a wedding, we had a simple, delicious dressing with similar ingredients, and now it’s a staple in our home.

 

Home Made Lemon Burst Salad Dressing

-The juice of one lemon

-1/2 cup of olive oil

-1/4 cup parmesan cheese

option add red pepper flake,

Whisk with fork and use your hands to coat and stir the dressing onto the prepared salad.

This salad is rich and satisfying and will nourish your whole body.  In fact, avocado is a perfect salad topper because it helps your body absorb the nutrients in your greens more efficiently.  Each of the ingredients is a superfood; kale, salmon, tomatoes, lemon, and best of all, kid approved.

Sometimes, it’s good for us to need to rely on our garden.  I never stop being grateful for the food that grows right out of the ground at our very own house.
