Cauliflower Pasta

I hadn’t really cooked too often with Cauliflower, and I perceived it as a harder, whiter version of broccoli, but then one Thursday when I took the lid off of our CSA box, there it was, a white round semi circle.  It sat in the fridge for at least a week.
“Well, I better put it in something,” I decided, as I never want to let food go to waste.  And as it turns out, I found the perfect food for it!
Be careful, this may get tricky:
Cauliflower Pasta:
1. Boil water

2. Chop up Cauliflower

 3. Once water is boiling, put both the pasta and the cauliflower in together.

4.  Once it’s tender, drain, and add some pasta sauce, perhaps some pamesian cheese.

5. Serve and enjoy!

Ok, so this is going to sound weird but I think pasta is better with cauliflower…it was richer tasting–is that a thing?  A known fact already that I am just catching on to?

The pasta and cauliflower become the same texture and color, which I suppose would be a perfect way for kids to eat veggies if they are leery.

Can I just say that I love our CSA?  It is so awesome to have so many vegetables to eat on hand, and then without even trying or wanting to, we get super healthy:
Here’s how it goes down
“Honey, what’s for dinner?”
“Well, we don’t really have anything, and we can’t go shopping till tomorrow.  Well, we have lettuce, etc of course.”
“Ok, let’s just make a big salad and put some of that cut up tomatos, raddishes, and maybe some bean on it, then if we’re still hungry, we’ll have more.”
WHEN were still hungry, you mean!”
“Definetly.”
We eat these huge, amazing salads….then we’re full!  We don’t even know ourselves any more.  We stay SO much in our Dave Ramsey budget, it’s awesome.  Apparently raw veggies have more protein than meat.  We have been cutting down our meat intake, and adding more veggies to…well, pretty much everything.

p.s. today we apply for our Visas!  Looks like we’ll be traveling next month!

    Ok so, I know this post is about cauliflower, but…. “Looks like we’ll be traveling next month!” AHHH!!! Yay 🙂 I am so excited for you.

    I need to find a CSA program deal around here. It sounds so neat. I’m not a huge meat fan so we go through A LOT of fruits and vegetables. I tend to get in a habit of eating the same stuff over and over again though, so I think the surprise factor of the CSA box would be really cool.
