Muffins for an Upset Stomach: (aka baby diarreah)

Our poor little guy was having the hardest time getting over diarreah a couple weeks ago.  After a few days without getting better, we took him to the pediatrician, especially since it seemed to us that he was loosing weight.

“Wow, he sure looks healthy, though!” she told us, which made us feel, well, fantastic.

She said it’s normal and he looks good, but just to give him pedialyte and give him a B.R.A.T. diet: Bananas, rice, apples and toast.

Feeding Finley bread was new to us, and we didn’t really like doing it.  I’m not sure why.  He would happily gobble down bits of bread, but it seemed like not a whole lot of nutritional value.  His appetite was low, and he was refusing different foods, including bananas.  I decided to make him some banana bread muffins only to be sure that he would eat some bananas.

I got out my mixer, and put in two and half very ripe bananas.  I added two eggs, and about a cup of flour, just enough to give the batter some body.  No sugar, but a pinch of cinnamon, and baking soda.

I mixed the ingredients and put them in the oven for about minutes at 350.  I had set the timer for 12, and kept testing it with a tooth pick until it came out clean.

FINALLY!  I could feel him bread that I felt good about!  It was full of eggs and banana, and he LOVED IT!  It could have just been the right timing of his healing anyway, but either way, right when we started feeding him these muffins, his diarrhea of more than a week started getting better!

I froze three right away, and they other two were very portable and I took them with me for meals and took off little pieces for snacks.

I know, I know, I didn’t really provide a real recipe, and I’m sorry! I kinda just threw together what I wanted him to be eating and baked it.  I was lucky it turned out so good!  They were very spongy from the eggs.  Here’s my best guess:

2.5 ripe bananas
2 eggs
1 cup flour
1 teaspoon baking soda
.5 teaspoon baking powder
pinch of cinnamon

    This is beyond awesome of you to provide!!!! My lil one had a terrible bout a month or so back….I am keeping this handy for the future. And perhaps breakfast for my pickey eater? Loves bananas…. 😉

    I will definitely give these a go for my boys. I have a wonderful Banana bread recipe that is currently in transit across the Atlantic to me here in LA which I will pass onto you, when it finally arrives.

    Made these for myself after some tummy stuff but didn’t have flour so used quick oats, grated some ginger, and added 1/2 tsp honey. Layered it with a little plain homemade yogurt for probiotic effect and it was delicious. I know it probably changed the original recipe but it really helped me get started. You really can tweak this. Thanks for posting! Think I will turn this into our whole family’s breakfast.

    Thanks so much for sharing this! Even if the recipe isn’t exact this is the encouragement I was looking for to whip up this for my 3 yo who is getting over stomach bug. I just used 1 egg, 2 bananas and less than 1 cup flour. Added some maple syrup and ginger too. They were perfect!
