I love…

Tofu.

Oh my gosh, stop!  Don’t you even roll your eyes at me.

Tofu does have a lingering hippie connotation, and maybe even an untasty connotation, but NO dear friends, NO!  It is wonderful.

I love it, and if you give me a chance, you might too!

I like protein in my meals, but I am not too eager to cook raw chicken for lunches. (I mean, it’s kind of pricey, and kind of gooey, and I like to save that stuff for dinner)

Tofu on the other hand it so good and ready to go.  It absorbs whatever flavor you cook with it, and if you’re smart you’ll only buy “firm” which really does make you feel like you’re eating chicken–actually, at this point in my tofu adventure, maybe even better than chicken!

Plus, this stuff is CHEAP!  Such a good deal for a cheap, healthy lunch.

So here is my most recent lunch routine:

`Heat up the skillet with some vegetable oil (I use vegetable becuase I am making a stir fry, and it’s better than olive for asian type cooking.)

`Chop up a head of brocolli (I know, right?  So healthy!!  And it’s really good in this dish.)

`Chop up whatever kind of vegetables you have.  Sometimes I do carrot, tomotoes, cucumber, avocados, whatever in the fridge.

`Cube up your tofu block and pour the whole concoction over white or brown rice.

`Drizzle your favorite sauce over.  I like teriyaki or asian sweet and spicey.

 It is so tasty, and when you’re done eating it, you will marvel at how many greens you just consumed.

And you will be darn glad you did once you go see the move Forks over Knives about how our food choices are killing us.  Human diets need to be primarily plant based to avoid most common ailments such as cancer heart disease and diabetes, which in fact are comparatively recent human health problems…

Whoa, I am going on a rant when all I really meant to tell you that Tofu is delicious, easy to prepare and cheap.  Please forgive!

Well, for now, I will leave you with Andrew and my dream for the summer (And The Tiny’s)–  To live in a tree hosue, and spend our days in rivers and waterfalls, while hanging with monkeys. As it turns out, it is a true possibility

    I stopped by today just to say thanks for your comment – thankfully I was able to read it before Blogger went into a spiraling 24 hour meltdown – and then I see my name on your blog?! So cool. You’re making me feel all legit and pro-blogger. I think we just need to be tree house neighbors asap. We’ll be all eco chic together, bond over redheads, and read Hyperbole and a Half till we’re laughing so hard our husbands will think we’re drunk. Ok? Ok.

    I love tofu too, and we make a similar dish at our house! We call it broccoli tofu stirfry, and we’re having it for dinner tomorrow 🙂

    i can’t believe it really tastes that good!?! My only question is, doesn’t tofu have soybeans in it? I’m really worried about all the GMO’s out there and almost all soybeans are now (unless its organic)! Maybe you use organic and could tell me where to acquire some? BTW, thanks for the comment and am now OBSESSED with your blog 🙂

    You’re so cute, tofu taste good, I promise! We DO buy organic-non-GMO. The brand I like is small planet, and they even have flavored tofu! We get it at a natural food store called Henry’s! If you try it, let me know!! Bye for now, bloggy friend! Xoxo
